After receiving the fresh fish, a quality evaluation test is carried out on a sample in the laboratory. The fish are either left whole or headed, and then gutted and tailed. They are later cut into filets or pieces and finally delicately nested and pre-cooked in the steam oven. MDM recipes are always careful to consider the noble material that is fish, whether it is processed whole, fileted, crumbled, drizzled with oil, in sauces or with vegetables.
Then comes the sterilization stage followed by quality control. The process ends with conditioning and packaging.
From the clupeidae family, the sardine is a little pretty fish that measures less than twenty centimeters in length and is easily identifiable with its fine line, silvery belly and bluish back.
It is a fish with delicate and tasty flesh, rich in Omega-3 fatty acids and nutrients such as phosphorus, selenium, calcium, vitamin D, vitamin B3 and vitamin B6.
Abundant on the Moroccan Atlantic coast, between May and November, it is at this time of the year that the fishing season takes place.
Upon receipt at the cannery, the arrival of sardines undergoes delicate sorting to keep the best fish.
After being headed, gutted, and tailed meticulously by hand, the sardines are then nested so that they are put in the oven in their boxes, overturned on the grids and then basted. Subsequently, the boxes are crimped, sterilized, and packaged.
Mackerel belongs to the Scombridae family. There are two related species: Scomber scombrus and Scomber japonicus (Spanish mackerel).
It is a fish with a slender body whose back is blue green, streaked with black stripes, while its belly is silvery white. It is highly recommended by nutritionists because it is naturally rich in omega 3 and vitamins D, B3 and B12.
Fishing for this delicious fish is done in spring and summer due to its migration from the deepest waters of the continental shelf to littoral and more superficial waters.

Once the filets are ready, they are then nested and basted. After seaming, the boxes are sterilized and packed.
Tunas are oceanic fish of the Scombrid family: Bluefin tuna, White tuna – or Germon – Yellowfin tuna, Bigeye tuna and Skipjack tuna. These last three are tropical tunas.
